Healthy Cauliflower Soup

We all love the silky smooth texture of cream soups, Nevertheless, I believe a lot of us are also afraid of gaining too much fat from our daily meals.

This easy-to-make healthy cauliflower soup recipe definitely helps us to solve the dilemma. The recipe doesn’t need to add milk or cream, and It is low carb, nutritious and vegan (if you don’t add butter), Most importantly, the soup can be done in 30 minutes.

Cooking time:

30 minutes

Ingredients:

Cauliflower 1 medium head

butter or olive oil 10-20g, to your liking

black pepper to taste

salt

How-to-make:

1. Cut the washed cauliflower into florets, and stems into thin slices.

2. Poach the florets and stems in salted water (I added two tablespoons) in a small pot, until cooked.

3. Put the cooked cauliflower florets and stems into a blender, with some of the salted water (adjust the amount of water to your liking. The blender might not work if too less water is in.) Blend until smooth.

4. Pour the puree into a container. Add butter or olive oil to your liking. Lastly, add pepper to taste.
