Banana muffins
This is the most straight-forward, simple recipe for muffins, I reckon. It does not require special bakery techniques, nor specialised tools such as a blender. After all, cooking with kids would be fun, you and your kids may simply add whatever toppings you like, no rules at all. After all, it takes only 30 minutes to make.

Ingredients (4 pieces):
Ripe banana 1 pc
Vegetable oil 20 ml
Melted butter 20g
Sugar 30 g
Egg (big size) 1 pc
All purpose flour 80 g
Milk 20 ml
Baking powder 1/2 tsp
Baking soda 1/4 tsp
Salt 1/4 tsp
Vanilla essence 1 tsp
How-to-make:
1. Preheat oven to 220 °C
2. Smash the banana in a bowl with a fork
3. Add vegetable oil and melted butter into the bowl and mix well
4. Add in sugar, mix well
5. Add in the egg and vanilla essence, mix well
6. Sift all purpose flour, baking powder and baking soda in another bowl
7. Mix the sifted flour, salt and the egg mixture well
8. If you are not using non-stick cupcake tin, please grease the surface with oil first. Then, fill the tin with the batter, up to 3/4 full.
9. Add in your favourite toppings or add-ins,such as chocolate chips, nuts or dried fruits
10. Bake the muffins for 8 minutes at 220 °C,then turn down to 175°C and bake for 15 minutes
11. Cool down, ready to serve
