Avocado sourdough with sunny egg

As super food, avocados provide a wide range of benefits. Its creamy texture also makes itself a vibrant ingredient for meals - you can simply have a ripe avocado on a toast, or dice it for salads, or even make a sauce to go with your pasta.

Having a brekkie with avocado toast topped with a sunny egg is such a blissful thing to start a new day with power and nutrients.🍀 Nevertheless, the key is to have a good quality, ripe avocado. Sometimes, It is a bit tricky to determine if an avocado is ripe - even its skin is black colour, it could be an unripe one stored in the fridge previously. Thus, personally I prefer buying green avocados and let it ripen in room temperature, when it turns to dark green and you feel a softer texture when pressing it with your finger, it is ready to eat!

Ingredients:

Sourdough bread 1 slice

Ripe avocado 1 pc

Egg 1 pc

Sea salt

Black pepper

How to make:

  1. Heat oil in a frying pan on a medium heat, when the oil is hot, add the egg, and turn to a low heat unil the egg white turns to opaque completely 

  2. Cut the avocado into half, use a spoon to take out the avocado flesh and slice it

  3. Toast the bread in an oven or in a frying pan. Place the sliced avocado on top and sprinkle a little bit of sea salt and black pepper. Topped with the sunny egg, and sprinkle some sea salt to your liking
