Rigatoni Peperonata

Sometimes you just need a recipe that is easy to follow, then I will think of Jamie Oliver. And when he has partnered with two Italian chefs, Antonio Carluccio and Gennaro Contaldo, and showcased the making of certain Italian dishes on his website and social media channels, I do appreciate the authenticity behind each dish.

I am confident in making pasta, and this recipe enlightened me. Slowly cooked bell peppers, the use of balsamic vinegar, and the addition of mascarpone…really make a difference.

The above photo is the dish I made according to Jamie’s recipe.

See Jamie Oliver’s original recipe. It takes 45 minutes to cook at least.
