French sauteed potatoes with onion and herbs

It looks so rustic, doesn’t it? Sometimes you just need dishes which can casually be made, because life is so busy! Indeed, sauteed potatoes is a popular dish in French bistros.

I made this sauteed potatoes with chives and rosemary, using olive oil instead of butter. To enhance the flavour, you may use butter to brown the potatoes, and use any herbs you like.

Ingredients:

New potatoes 1 lb

Onion 1 pc

Chopped fresh chives

Fresh rosemary sprig

Olive oil

Salt to taste

Pepper to taste

How-to-make:

1. Cut the potatoes into roughly the same size; slice the onion

2. Put the potatoes in a pot, fill with tap water with 2 tsp of salt. Bring it to a boil

3. Strain the potatoes through a sieve

4. Add sufficient olive oil in frying pan. Use a medium heat

5. When the oil is hot, add in rosemary sprig and sauteed for a few minutes

6. Add the potatoes and pan fry until golden brown on one side first, then start tossing to brown each side of the potatoes

7 Add onion slices, salt and pepper to taste, and toss until onion slices soften

8. Turn off the heat and sprinkle chives, toss the potatoes to mix in the chives evenly
