Healthy Broccoli Soup

After making the cauliflower soup, without cream, I am into this kind of healthy veggie soup and make another trial with broccoli. The recipe takes a few more steps in order to remove the bitterness of broccoli. Yet this soup is even more flavourful!

Cooking time:

30 minutes

Ingredients:

broccoli 2 heads

onion 1 pc

all purpose flour 3 tsp

chicken broth 200ml

milk 100ml

black pepper to taste

salt

How-to-make:

1. Cut the washed broccoli into florets, and stems into thin slices.

2. Chop the onions and slice the garlic

3. Sauteed the garlic in a pot in low heat for around 3 minutes

4. Add the chopped onions and sauteed it until translucent and caramelised

5. Add the flour and cook until the flour turns slightly blonde. Beware of burning out the flour

6. Add milk and broth, bring to a boil. Add broccoli pieces until cooked. Season to taste

7. Puree the soup with an immersion blender. Ready to serve.
