Pancetta salad, balsamic vinegar
This is such an easy salad recipe. I pick pre-packed salad greens from a supermarket and a box of diced pancetta, pan-fry the pancetta till golden brown, then pour over a dash of quality balsamic vinegar. Done.
Sometimes, I do make a twist, sprinkling roasted nuts like pumpkin seeds, pine nuts etc. on top to add nuttiness and crunchiness. And the dressing of a salad is equally important; I did make a very watery dressing before, making the greens so soagy. Thus, using balsamic vinegar is the most handy solution!

Ingredients:
Diced pancetta
Salad greens
Balsamic vinegar
How-to-make:
Pan-fry diced pancetta on a medium heat in a frying pan until browned.
Clean the greens and drain water from the vegetables
Add fried pancetta and a dash of balsamic vinegar. You may also add roasted pine nuts, walnuts etc to enhance the flavours and complexity of texture.
